Answer to First Ever “Ask Amelia” Question

Thank you, oh precious sister-in-law, for being the first to submit a question to Ask Amelia!

Question:  Do you have a healthy and delicious recipe for a homemade pie crust? I love to make quiche but I always end up buying the frozen pie crust from Trader Joes, which probably isn’t very healthy. I load up on the veggies inside the quiche, but would still like to know how to make a delicious yet nutritious pie crust for quiche and pies.

Answer: Your hunch was correct: pie crust is pretty high on the list of Least Healthy Foods of the World.  (But man is it good).  A few alternatives to try:

  1. Buy the whole wheat version of THIS CRUST.  It tastes great, and even though it’s still high in fat and calories, at least it has less saturated fat than traditional pie crust and a couple grams of good-for-you fiber.
  2. Make a reduced-calorie, low fat pie crust using THIS RECIPE (I’ve never tried it, but Hodgson Mill recipes are generally pretty good. Use any whole wheat pastry flour.)
  3. Make a mock crust using brown rice.  It’s a nice change of pace, and the rice gets crusty on the bottom which makes it super tasty.  Simply mix 2 cups cooked brown rice with 1 beaten egg, 1 tbsp grated Parmesan cheese, and a sprinkle of salt and pepper.  Press it into your pie plate and bake for 5 min at 350.  Then add your quiche ingredients as you normally would and bake.  You’ll end up with a hearty, healthy quiche.  Enjoy!
