greek burgers

One of my favorite things to make for dinner is a “Greek Platter” which usually consists of hummus, tzatziki, tomatoes, cucumbers, red onion, bell pepper, feta cheese, olives, and whole wheat pita.  It’s a great meal for hot weather, and also a crowd-pleaser, because everyone can pile whatever ingredients he likes into his pita.  For a more substantial meal, add small lean burgers to the platter.

Greek Burgers

1.5 lbs lean ground beef (90% lean) or turkey

1/2 crumbled feta cheese

1/3 cup olive tapenade (or chopped olives)

1 Tbsp dried oregano

1 tsp each salt & pepper

juice of 1/2 a lemon

1 Tbsp olive oil

Mix all the above ingredients gently with your fingers, then form into small-ish patties.  Grill (or pan-fry) ~5-6 minutes/side, then serve with any or all of the following:

sliced tomatoes, bell peppers, red onion, cucumbers, and lettuce or spinach

hummus

more feta cheese

more olive tapenade or olives

store-bought tzatziki, (or make your own by mixing nonfat Greek yogurt with chopped fresh mint, shredded cucumber, & pinch of salt)

whole wheat pita bread
