Citrus and Fresh Herb Salad

It’s easy to skip salads during the winter, since there aren’t many traditional salad ingredients (lettuce, tomato, cucumber, etc) in season.  But thinking outside the box a little will lead you to all sorts of delicious salads that can be enjoyed during the chilliest months.  This one is simple and incredibly flavorful.  Not a fan of beets?  Just leave them out and add more citrus fruits.

Ingredients
  • ½ cup Fresh Cilantro, rough chopped
  • ½ cup Fresh Mint Leaves, rough chopped
  • 4 whole Orange, peeled with a knife
  • 3 whole Beets, cooked
  • 3 whole Grapefruit, peeled with a knife
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 pinch Kosher salt
  • 1 pinch Ground black pepper
Instructions
  1. Cut beets into wedges or chunks and place in a large salad bowl. Cut off any remaining white pith from the grapefruit and oranges, then cut fruit into segments or chunks and add to the bowl along with the chopped fresh herbs.
  2. Drizzle the salad with the olive oil and season with salt and pepper. Toss very gently and serve

    i made a version of this last night. it was delicious. i used the citrus and beet mixture as a topping on an arugula salad dressed with a citrusy vinegrette. goat cheese crumbles and a few walnut pieces made a great addition. thanks for another great recipe idea!
