Grilled Yellow Squash with Feta and Cilantro

Serves: 4 servings
- 3 lbs yellow squash or zucchini, cut lengthwise into thick slices
- 3 Tbsp olive oil
- Salt & pepper
- 4 oz feta cheese (look for authentic Greek feta made with sheep's milk)
- Small handful cilantro leaves, rough chopped
- Turn on your grill to medium-low and let come to temperature.
- Paint squash slices with olive oil and sprinkle lightly with salt and pepper.
- Place first batch of squash on the grill and let cook for 2-3 minutes per side. Repeat with remaining squash slices.
- Remove cooked squash to a platter and sprinkle with crumbled feta and cilantro.
