When I asked you back in January what you wanted to see more of on this blog, some of you requested more gluten-free recipes.
Admittedly, I come from a long line of gluten-lovers (I swear my parents serve bread with every meal, even if the meal is sandwiches) and am thus a frequent consumer of gluten. But making you happy is important to me! And I’ve learned from many of my talented blogging friends that gluten-free recipes are just as delicious as the gluten-y ones.
So I’ve been taste-testing and playing around with some gluten-free baking products, just to see what they’re like. (Any excuse to bake treats, right?).
One of my favorite recent experiments were these Strawberry Walnut scones. This is hardly a “recipe,” since these are simply Pamela’s biscuit & scone mix combined with with fresh strawberries, walnuts and orange zest. But they were so tasty and so easy to make (thank you, packaged mix) that I thought I’d share the idea with you for those lazy weekend mornings you don’t feel like making anything from scratch.
The combination of the fresh fruit, flavorful zest and crunchy, butter walnuts is just about perfect.
If you don’t have plans for Mother’s Day or need a brunch item, give these scones a whirl. Whether you’re a gluten-eating crowd or not, these flaky, spring-inspired treats will definitely be a hit.
I served the scones alongside more fresh strawberries and vanilla Greek yogurt. Of course, whipped cream would also suffice 😉
