I Have A Confession

I used to think that no matter how busy my life as a mom got, I would always have the energy and motivation to cook.

Turns out I was wrong.

On most days, I am so exhausted by dinner time that I would happily eat a few string cheeses then fall over into bed.  Raising a baby and working full time is hard, and although pleasurable in many ways, it leaves very little energy for anything else, including dinner preparation.

So, for the time being I have stopped “cooking” and started “assembling” meals.  I’ve found this to be the answer to the question of how to eat healthy meals at home when you’re too busy to cook.

Mostly, I assemble salads.  Not only are they healthy, they’re one of my favorite foods, and the options and variety of ingredients are endless so we never get bored of them.

Later, I’m sure I’ll get into real cooking again.  But for now, I’m too busy working and loving that little mess-maker in the video above.

    i love that you let lucy do this! i was dying of laughter. and i know how you hate to waste things. so i imagined you patiently stuffing each kleenex back into the box. you’re such a good mom! and thanks for admitting that cooking is hard (even when you’re not a mom!).

    You know me too well! Luckily this was when my dad was visiting, so he conscientiously folded and re-stuffed each Kleenex…though of course Lucy got into it again!

    That is just about the best thing I’ve seen! Of course, Lucy was making a mess, but she would’ve made the same “mess” with a box of toys, puzzle, etc. After a week with a sick baby, I’m sure you’re more than happy to see her content and engaged! 🙂
