I love dairy products.

But I also love experimenting with dairy-free alternatives to see how I can create creamy and fluffy recipes with plant products alone.

So after making and loving this pumpkin pie smoothie, I thought I’d whirl up a vegan version.

Whether you eat dairy or not, you’re going to love this Vegan Pumpkin Pie Smoothie. It’s creamy, nutty, perfectly spicy, and tastes like everything you love about fall.

Vegan Pumpkin Pie Smoothie

Taste the sweet and spicy flavors of fall in this creamy, vegan treat!
Serves: 1 large smoothie
Ingredients
  • 1 cup homemade (or fresh from a juice or coffee shop) cashew or almond milk
  • ⅔ cup pumpkin puree (try freezing in ice cube trays for a frostier smoothie)
  • ½ tsp pumpkin pie spice
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 3-4 pitted dates
  • ½ tsp vanilla extract
  • Ice cubes to taste
Instructions
  1. Add all ingredients, except ice, to a blender and blend until smooth.
  2. Add ice cubes, a handful or two at a time, and blend on high until you reach desired consistency.
Notes
If you don't have or don't want to use homemade nut milk, you can use store-bought - just add ¼-1/2 an avocado to the smoothie to add some additional creaminess.
