A few weeks ago I used my Crock Pot for the first time – after owning it for 8 years – and was immediately obsessed. An appliance that will actually make my family dinner while I’m at work? YES.
Why hadn’t I given this thing a whirl before? Because I always associated slow cookers with meaty meals — things like pulled pork, beef stew, sloppy joe’s — meals I eat only on occasion. I didn’t realize how many amazing healthy, vegetable-based dishes you can make in the slow cooker. But turns out, there are many.
