Eating a few vegetarian meals each week is a great way to start improving your health and reducing your environmental impact.  If you’re not already in the habit of making or eating meatless meals, start with just one day a week — perhaps Meatless Mondays — and go from there.  Think you won’t be happy or satisfied with vegetarian meals?  Wrong-o, Buck-o.  Vegetarian food can be hearty, flavorful, and satisfying, so pull your mind away from tofu with steamed broccoli and start with some of these easy ideas.

    Can you please expand on this idea and make a list of meatless options that are also high in protein? Everyone knows the standards like eggs and beans, but what about other good sources of protein? Are there guidlines for combining, i.e. combine beans with rice for a complete protein? I’ve heard that this idea is obselete and not necessary. I love the idea of going meatless at least once per week, but I want to be sure I’m also getting enough protein. Help!
