Mango Avocado Salad with Creamy Salsa Dressing

Serves: 2 main dish servings
Ingredients
  • 3 cups (packed) chopped Romaine lettuce
  • ½ a large mango, peeled and cut into cubes
  • ¾ cup black beans
  • 2 Tbsp sliced or diced red onion
  • ½ a large ripe avocado, cut into cubes
  • Cilantro leaves (optional)
  • For the dressing:
  • 2 Tbsp plain whole milk yogurt (I used Greek)
  • 3 Tbsp salsa
  • Juice of ½ lime
Instructions
  1. Divide the chopped Romaine between two dinner plates or bowls.
  2. Top the lettuce with the mango, beans, red onion, avocado and cilantro leaves (if using).
  3. In a separate small bowl, whisk together the yogurt, salsa and lime.
  4. Drizzle the dressing over each salad and serve.
Notes
Optional additions: crumbled tortilla chips, chicken breast, tofu cubes or shredded cheddar cheese.
