Vegan Caesar Dressing

This recipe makes more than you'll need for one salad, but you'll love having leftover!
Ingredients
  • 4-oz chunk Silken tofu
  • 2 small cloves garlic
  • ¼ cup balsamic vinegar
  • ¼ apple cider or white wine vinegar
  • Juice of ½ a lemon
  • 1 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 Tbsp Dijon mustard
  • ¼ cup extra virgin olive oil
  • Salt & pepper to taste
Instructions
  1. Place garlic and tofu in a food processor or high powered blender and pulse until chopped.
  2. Add remaining ingredients and blend until smooth and creamy.
  3. Taste, and add desired amount of salt & pepper.
Notes
This is a very flexible recipe, so add more mustard, honey or garlic to taste! Store any leftover dressing in the fridge for up to a week.
