5 Minute Veggie Flatbread

This colorful, crunchy, satisfying flatbread recipe is ready in minutes and can be easily altered to suit your family's tastes!
  • Store-bought flatbread, Naan, or thick pita bread
  • Your favorite hummus (I like Sabra's Kalamata olive and Cilantro JalapeƱo)
  • Shredded carrots (rainbow if you can find them)
  • Thinly sliced cucumbers
  • Thinly sliced radishes
  • Chopped green onions
  • Feta cheese crumbles (optional)
  1. Toast or bake the flatbread (or whichever type of bread you're using) until it's slightly crunchy and stiff enough to hold toppings, like a cooked pizza dough would be.
  2. Liberally spread hummus all over the flatbread.
  3. Top the hummus with layers of the sliced and shredded veggies.
  4. Serve and enjoy!
