Taste the sweet and spicy flavors of fall in this creamy, vegan treat!
Serves: 1 large smoothie
Ingredients
1 cup homemade (or fresh from a juice or coffee shop) cashew or almond milk
⅔ cup pumpkin puree (try freezing in ice cube trays for a frostier smoothie)
½ tsp pumpkin pie spice
½ tsp cinnamon
¼ tsp nutmeg
3-4 pitted dates
½ tsp vanilla extract
Ice cubes to taste
Instructions
Add all ingredients, except ice, to a blender and blend until smooth.
Add ice cubes, a handful or two at a time, and blend on high until you reach desired consistency.
Notes
If you don't have or don't want to use homemade nut milk, you can use store-bought - just add ¼-1/2 an avocado to the smoothie to add some additional creaminess.
