Toast with Ricotta and Spring Mix Pesto

- For the pesto:
- ¼ cup walnuts (or other nut of choice)
- 2 Tbsp grated Parmesan cheese (omit to make vegan)
- 1 clove garlic
- 1 5-oz package of Earthbound Farm Spring Mix
- Juice of 1 medium lemon
- 3 Tbsp olive oil
- 3 Tbsp cold water
- Salt and pepper to taste
- For the toast:
- Sliced bread of choice, toasted
- Ricotta cheese
- Spring Mix Pesto
- Tomato slices, more Spring Mix, cucumber slices, etc for topping
- Place nuts, cheese and garlic in a food processor and blend until coarse crumbs form.
- Add remaining pesto ingredients and blend until smooth. Add more water or oil if thinner consistency is desired.
- Spread some ricotta onto each piece of toast and top with a thick smear of pesto.
- Eat as is or top with any veggies you like.
- To make this recipe vegan, leave out the Parmesan cheese and use smashed peas in place of ricotta cheese.
