Healthy French Toast

Ingredients
  • 1 cup 1% Milk
  • 2 whole Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Sugar
  • 1 pinch Kosher salt
  • 4 pieces 100% Whole Grain Bread
  • 2 teaspoons Butter
  • 2 tablespoons Maple Syrup
  • 1 cup Blueberries
Instructions
  1. Preheat a griddle or large skillet over medium-low heat.
  2. For the custard: In a shallow bowl or large rimmed plate, whisk together the milk, eggs, vanilla, salt, and sugar.
  3. Place one piece of bread in the custard and turn several times until bread is lightly soaked. Add butter to the skillet then place the bread in the pan too. Repeat with remaining slices of bread. Cook the French toast for 3-4 minutes per side, checking the bottom periodically to make sure it doesn't burn.
  4. Place two pieces of French toast on each plate. Top with 1 Tbsp maple syrup and ½ cup berries or chopped fruit of your choice. Enjoy!
