Simply saute the veggies in a little oil with a sprinkle of salt. After they’re soft, add the quinoa and beans and stir gently until heated through. Place this mixture in a bowl and using the same pan, fry an egg to place on top, then finish with some shaved or grated cheese of any kind. Fresh herbs would also be a great addition.
