Grilled Peanut Butter & Banana Sandwich

Liven up this childhood classic by grilling it.  Couldn’t be simpler, but it tastes like a real treat.

Grilled Peanut Butter & Banana Sandwich

Preheat a nonstick skillet over medium heat.

Spread 2 pieces of your favorite whole grain bread (I use Ezekial Cinnamon Raisin) with Light butter, then spread a thin coat of peanut butter on each of the unbuttered sides.

Pan-fry the sandwich like you would a grilled cheese.

After crusts begin to brown, open the sandwich up and place some banana slices and a few chocolate chips inside.

Grill a couple more minutes then cut in half and enjoy!

Variations: Go for the standard PB & J * Stir cinnamon, honey & raisins into the PB before slathering on bread * Use Peanut Butter & Co. Dark Chocolate Dreams instead of regular * Add thinly sliced apples instead of bananas * Use sourdough bread, a surprisingly good compliment to warm PB *
