I used to actually enjoy devoting time to dinner preparation. It was how I relaxed at the end of a long day, and I felt happy and proud to place something homemade and beautiful on our table.
Things are different now. I still love to cook, but with a toddler in the house, I don’t have time to do anything leisurely, especially at the dinner hour. So like many moms, I now rely on some help from the grocery store. In particular, pre-washed, pre-packaged produce, and the occasional frozen pizza. With these tools, I can get a healthy dinner on the table in about 20 minutes – one that everyone will eat and enjoy!
