If you’ve never had Pho, you’ve been missing out. Pho (pronounced Fuh, not Fo or Fa) is a fantastically light and flavorful Vietnamese noodle soup that keeps you full for hours. There are Pho restaurants in every city, and it’s fun to try out different spots to see who has the best broth — because it’s all about the broth, as well as the fun things you get to put IN your Pho like Thai basil, bean sprouts, jalapeno, fish sauce, and lime.
My favorite Pho “restaurant” a.k.a little shack is Pho Bac in Seattle. They have only one thing, Pho with beef, so you just go in and say Small or Large. If you want a vegetarian soup (like the one above) or other Pho options, head next door to Pho Viet, which was started by the same family and is also delicious.

i vote for the pho shack on rainier in seattle as well. thanks meel for introducing me to it 16 years ago! i’ve had many a bowl there…
