It’s the weekend, and time for a splurge. Whether you need an easy dessert for your Oscar party tomorrow night, or just want to kick back with a treat, these ice cream sandwiches are perfect. Simply put a scoop of your favorite ice cream (soften for a few minutes on the counter) between 2 thin cookies, then freeze for a couple hours and enjoy. I love to use chocolate chip cookies + Alden’s Organic ice cream. This time, I stuffed some of the cookies with mint chocolate chip, and some of them with vanilla then rolled them in fun toppings. I’m already excited for tonight when it’s dessert time again!
Why am I such a huge fan of Alden’s ice cream (besides the fact that it’s delicious)? Because of this.

YUM! These look so good — and I love how you used really thin cookies as the outside. These would be perfect to serve as dessert at anything from a casual get-together/bbq to a more formal dinner party.
