I’m usually not a big fan of boxed baking mixes, because they’re often made with unnatural additives, preservatives, and ingredients I can’t pronounce. But recently, Cherryvale Farms sent me some of their “Everything But The…” mixes and I was pleasantly surprised to see that they are different. These are the only ingredients in their banana bread mix:
Organic Unbleached Flour, Organic Cane Sugar, Whole Egg Powder, Nonfat Dry Milk, Baking Soda, Vanilla Powder, Sea Salt, Cinnamon
To these you just add bananas, butter or oil, and water. That’s it. So what you get is a quick and easy banana bread that resembles homemade in both taste and quality of ingredients.
I can never resist altering package instructions a little, so I replaced half the oil with plain whole milk yogurt, plus a few extra tablespoons. It was ready for the oven in about 5 minutes, and the banana bread came out moist and delicious.
I will still continue to make homemade most of the time, but Cherryvale Farms mixes are a great option to keep on hand when you need a baked good, and fast!
