Tropical Spinach Smoothie

Smoothies are my absolute favorite. Even when it’s freezing cold outside, I’m always game to bundle up from head-to-toe in order to enjoy a thick, frosty mug of whatever smoothie I’m most into at the moment.

Usually, I’m a dairy girl – the type who never tires of yogurt or milk – especially in smoothies.

But when Earthbound Farm asked me to create a feel-good smoothie as part of their Breakfast Month, I found myself craving something out of the ordinary. Something vegan. Something bold. Something green.

What came of this craving just might be my favorite smoothie ever.

Though it’s 100% dairy-free and vegan, this Tropical Spinach Smoothie is rich and creamy, almost like a shake. Yet its healthy ingredients mean it’s more than suitable for breakfast, a snack or even lunch (perhaps topped with some granola & coconut flakes). If you like a little more bite to your smoothies you could easily swap out the spinach for one of Earthbound’s zestier greens, like Zen Blend greens or baby kale. Whatever Earthbound greens you choose, you can rest assured that they were grown and produced in a way that protects and nourishes both people and the earth. That’s just how Earthbound rolls 😉

With the holiday season – a.k.a. a two-month-long Eat-a-Thon – coming up, I’ll definitely be making this nutrient-packed smoothie whenever I need to regroup.

Tropical Spinach Smoothie

A vegan tropical treat!
Serves: 2 servings
Ingredients
  • 2 cups Earthbound Farm baby spinach leaves
  • 1 cup light coconut milk
  • ½ a medium avocado
  • 2 pitted dates
  • 2 cups Earthbound Farm frozen mango chunks
  • 2 cups frozen pineapple chunks
  • 1 ripe banana
Instructions
  1. Blend all ingredients in a blender until smooth.
  2. If mixture is too thick, add 2 Tbsp water (more if needed).

    I think even I could get down with this. I would have no idea whatsoever how to deal with an avocado, but I might be willing to figure it out. Ok that was a crazy thought–we both know I’ll substitute greek yogurt 😉
