In a week or two, peach season will be over until next year. (Waaaaah!) So before then, do yourself a favor: make these individual peach pie pots!
My lovely assistant Diana got this idea from Pamela Salzman and kindly made me some. Tyler and I loved them so much that I’ve been making them almost weekly for the last two months. They are the perfectly portioned dessert, and with a scoop of vanilla ice cream they are simply heavenly. We’ve even topped them with Greek yogurt and eaten them for breakfast.
If peaches are no longer available where you live, no worries. You can easily make these with apples or any other fruit. Just cook the apples a little longer since they’re a bit crunchier.
