The slow cooker isn’t just for fall and winter. Here are twelve ways to put it to good use during summertime!
It’s finally warm outside. You don’t want to turn on the oven or spend time over a hot stove, but you want to eat well, have friends over, and put all that delicious summer produce to good use.
Enter the slow cooker!
Until recently I associated my slow cooker with winter meals: stew, chili, mashed potatoes, and the like. But when I found myself with an abundance of fresh corn recently, and made the most amazing Fresh Corn and Zucchini Chowder recipe (see below), I realized that probably wasn’t the only wonderful summer dish that could be made in the slow cooker.
So, I’ve compiled a bunch of recipes I’ve either made or want to make, that will keep your kitchen cool and your taste buds happy, all summer long.

Peach cobbler is one of my all time favorite desserts, but baking it in a smallish kitchen is truly a sweltering labor of love in the Summer. Slow cooker to the rescue! And the creative riff about using the paper towel to soak up the condensation is brilliant.
