Flavorful, low-calorie salads don’t have to be fancy or time-consuming. This Greek salad takes less than 5 minutes to prepare, and thanks to fresh summer veggies, it tastes fantastic without a lot of fuss. It’s this type of veggie-heavy lunch or snack that will send us down the path of losing weight for good!
EASY GREEK SALAD
1 Persian cucumber (the tiny kind)
1 small yellow, red, or orange bell pepper
A few thin slices of onion, red onion, or green onion
1 medium tomato
2 tsp extra virgin olive oil
1 tsp balsamic vinegar
Salt & pepper
Roughly chop all the veggies, then drizzle with the oil and vinegar and sprinkle with salt & pepper. Toss to coat, then serve. Note: letting this salad marinate in the fridge makes it even more flavorful, so feel free to make bigger batches of it to last a few days in the fridge. You could also add some chopped olives (2 Tbsp), crumbled feta (2 Tbsp), and/or chopped chicken breast (1/2 cup) to make this salad more of a substantial meal.
