Cottage cheese is one of those polarizing foods: people either love it or hate it.
If you or your family members fall into the “Hate” category, it’s probably due to the texture of cottage cheese rather than the taste. And just a few seconds in the food processor or blender can fix that.
Why bother?
Because cottage cheese is a quick and easy source of protein (15 grams in just 1/2 cup) and makes a great base for dips, dressings, creamy sauces when it’s blended until smooth. You can also use it in place of ricotta cheese in lasagna, add it to pancake/waffle batter to up the protein content, or even stir it into oatmeal. It also makes a great sandwich spread and quesadilla filling.
To make cottage cheese perfectly smooth, pour it into a food processor and blend until the lumps are gone.
The longer you blend it, the smoother it becomes. When you have the consistency you want, just place the cheese back into the original cottage cheese container and use within 3 days.
Dips Using Smooth Cottage Cheese:
- Pesto Cheese Dip
- Tzaziki
- Spinach Artichoke Dip (use in place of cream cheese and half the yogurt)
- Buttermilk Ranch Dressing (use in place of the yogurt and half the buttermilk)
