It’s easy to forget that lunch can be delicious without being complicated. While a big sandwich, salad, or soup is satisfying when available, a simple combination of a few ingredients can be surprisingly tasty too. The picture above displays my latest favorite go-to lunch (or breakfast, or hearty snack) – a thick shmear of avocado on whole grain toast with a sprinkling of salt. Since there’s not much involved here, the flavor of the avocado really shines, and the smooth, creamy texture goes perfectly with the crunchy toast. If you wanted a little more bulk or color, you could add tomato or cucumber slices, but even as is, I think you’ll enjoy this straightforward meal!

November 9, 2011 at 10:43 ami’ve been having too many open-faced grilled cheese sandwiches. super easy to make and so delicious. rosemary salt bread from trader joe’s i always keep sliced in my freezer and aged cheddar, also from tj’s. slap a few slices on top of toasted bread and place in broiler for a few minutes. so good. add fig or apricot jam to spice it up. chicken for something hardier! yum!

November 9, 2011 at 6:40 pmMy new discovery is goat’s milk mozzarella cheese. It’s tangy, and, like regular mozzarella, lighter than other cheeses. It’s excellent grated on baked squash or other vegetables. Can’t wait to try it in the pumpkin fondue!

I must say that smashed avocado on “anything” is an absolute favorite of mine, I even mash it up with eggs and melt a slice of cheese on toast and there’s a snack or lunch in minutes. LOVE!
