Have you ever thought to put peanut butter in a quesadilla?
Me neither!
But when I gave it a whirl last fall as part of a project I was doing with Peanut Butter & Company, I was pleasantly surprised at how well this flavor combination worked.
With peanut butter replacing the traditional cheese, this vegan quesadilla takes on a nutty flavor while retaining the creamy, rich texture we all love about quesadillas. Butternut squash, sweet bell peppers and onions round it out into a healthy and satisfying meal.
Bonus: it tastes great at room temperature making it a perfect school lunch option!
