How to Make a Kid-Friendly Salad

When Lucy was two years old, she came over to the table where I was eating a salad and opened her mouth for a bite. Until this moment I honestly didn’t even know a toddler could or would eat salad. But she loved it, came back for more, and has been enjoying salad ever since. In fact, salad is sometimes the only vegetable dish she’ll eat. So I’m always trying to come up with new and creative salads that appeal to “kid tastes.”

    My kids have recently starting eating salad and the other day when they were digging into a full on arugula salad with lots of veggies I was beaming with joy and pride. I didn’t even eat salad until college!
