So after making and loving this pumpkin pie smoothie, I thought I’d whirl up a vegan version.
Whether you eat dairy or not, you’re going to love this Vegan Pumpkin Pie Smoothie. It’s creamy, nutty, perfectly spicy, and tastes like everything you love about fall.
- 1 cup homemade (or fresh from a juice or coffee shop) cashew or almond milk
- ⅔ cup pumpkin puree (try freezing in ice cube trays for a frostier smoothie)
- ½ tsp pumpkin pie spice
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 3-4 pitted dates
- ½ tsp vanilla extract
- Ice cubes to taste
- Add all ingredients, except ice, to a blender and blend until smooth.
- Add ice cubes, a handful or two at a time, and blend on high until you reach desired consistency.
